SpiceBar barrier casing – the new face of sliced products

Convenience and wide availability are some of the biggest benefits appreciated by consumers who prefer sliced meat products. It is no wonder that this category is constantly and dynamically developing - especially in discount chain stores.

Up to now, Meat Processing Plants specialising in such produce, have used well-known and proven solutions. However, these methods need improvement. The use of casings transferring spices is associated with spices coming off, ever dirty production instruments and short shelf life of finished products. The market demands a new solution, which is SpiceBar – plastic barrier casing transferring spices.

SpiceBar is a solution for companies that require barrier features for the production of sliced meat products in spice covering. This casing is characterised by high calibre stability over the entire length of the bar. This allows obtaining a repeatable slice diameter and to permanently and evenly cover the bar with selected spices. The high barrier properties of SpiceBar also result in increased mechanical strength of the casing. This eliminates losses during manufacturing process and extends the shelf life of the products prior to slicing, which mean significant financial savings for the meat plant. SpiceBar also allows optimization and accumulation of production and building the stock whilst waiting for the orders. This is particularly beneficial for companies working with large chain stores, who are often surprised by the short lead time of sudden enquiries.

Until now, SpiceBar users emphasized the most the advantages of increased aroma of the products and the clean spice transfer process. This is particularly important when using heavily coloured spice mixes, requiring using strong cleaning agents after each treatment. Just imagine, it’s the end of washing production instruments after each cycle!

- SpiceBar is a great solution for the production of steamed, sliced products - both pork and poultry. A wide selection of available spice mixes allows not only to modify the appearance of the product, but also to give it a unique aroma and mouth-watering taste - says Adrian Woźnica, the Technologist at Nomax Group. The barrier feature of the casing guarantees minimal thermal losses, which results in stable casing performance during the steaming process. It also results in a significantly longer shelf life of the product in SpiceBar. This allows the manufacturer to take advantage of the opportunity to produce and store larger production batches. At the same time, the finished product does not lose anything at all - he adds.

Although, preparing this type of product was not easy. The path from the initial samples and tests to the first implementation at the Meat Plant was exceptionally bumpy and lasted several years! Nomax started working on this project in 2015, in close cooperation with a foreign partner. On the way, we encountered many difficulties - matching raw materials with desired properties, selecting and developing the new method of coating, forming and finally tests, tests and tests again... Today we can say with certainty that after months of hard work a product meeting the market expectations has emerged. However, we do not put off the project on the shelf and we constantly improve this solution, diligently listening to customer feedback and learning this product together with them. Nevertheless, it must be emphasized that due to its special properties, SpiceBar is the highest quality product on the spice market.
